How long do "follow requests" stay active?

Just ignore it. No one can follow you unless you hit the "approve" button. You could also block them if you want.

What does it look like when you delete the other follow request on their side?

Unless you block them, which will completely hide your profile from them, it will just show a message saying the profile is private, and they can send another follow request. They will not receive a notification either way.

Is it safe to accept requests from people you don't know?

That depends on what content you have on your profile. If you have personal pictures (perhaps revealing the school you go to or the street your house is on), it's not a good idea to let strangers see that, because they could do something bad with it. That's what private accounts are for. If your profile has only less personal material, you could probably accept those requests.
