    Expert Answer
I personally like cabbage sautéed or fermented as in kimchi. Cabbage in itself does not have a lot of flavor so boiling it is not my prefered method, unless you are making a stew with other ingredients.

Cabbage is best bought whole because all the nutrients and freshness are intact. Once the cabbage has been cut, it begins to lose quality. However, it is still good if consumed quickly after purchase and it is often a cheaper and more convenient way to get it. It really depends on whether or not you have the space to store a whole cabbage in your fridge or if it’s easier to store smaller quantities.

Cut the cabbage into slices or ribbons. Choose inner leaves for stir-frying. Add the cabbage 1 to 3 minutes before the stir-fry will be ready, to cook it just enough but keep it fresh and to avoid making it too limp.

Cut the cabbage in half. Remove the tough outer leaves. Lay the half on a cutting board and cut it finely across the leaves. Once done, place the shredded leaves into a colander and rinse gently under running water. Drain well. The cabbage can now be used in a salad or cooked as required.

Cabbage goes mushy when overcooked. It doesn’t need to be cooked for long, so the best cooking methods if you tend to overcook are steaming or sautéing. If you boil cabbage, be aware that it is very easy to over boil it and this is what makes it go mushy and smelly.

  • Question
My mother used to add bicarbonate of soda to the boiling cabbage water. Is this right?
    Community Answer
    Community Answer
Adding bicarbonate of soda makes the water more alkaline. Cooking foods in water that is more alkaline can reduce the bitterness and acidity of some kinds of foods. Mostly, it's a matter of personal preference. If you like the way cabbage tastes when you add bicarbonate of soda to the water, there is no reason not to cook it this way.
